Peaberry is a natural mutation of the green bean inside the cherry. Ordinarily, two coffee beans grow within a cherry with the flat sides facing each other. In the case of the Peaberry, a single bean grows and tend to be smaller, denser and more flavoursome.

While in cherry form it is impossible to distinguish which cherries will bear the peaberry. Additional sorting including machine and largely hand sorting is used to separate the peaberries. The Peaberry variety is known to be noticeably sweeter and full bodied.
